Olive Relish

INGREDIENTS

60g black olives
-
60g green olives
-
30ml red wine vinegar
-
30ml extra-virgin olive oil
-
1 tsp finely chopped coriander
-
1 tsp finely chopped dill (or you can use dried dill tops)
-
1 tsp fenugreek seeds
-
1 tsp finely chopped mint

METHOD

Roughly chop the olives
-
Put them in a bowl and add the red wine vinegar and oil
-
Add the herbs
-
Mix to combine
-
Enjoy!

This recipe was so simple to make, and very nice to eat! I mean, cutting up some olives and adding oil, vinegar, and herbs...you can't really go wrong there, can you? It took me less than ten minutes to measure everything out and make the relish, so it's perfect for a quick snack. I ended up serving mine with some pitta bread because just eating it off the spoon felt a little bit criminal!

The only reason I gave it four stars and not five is that I'm not a massive fan of coriander, but I wanted to follow the recipe, so I still added it. I think next time, I could add less red wine vinegar because it did make it quite acidic, but you can always add more olives and olive oil to balance out the flavours.

Things are looking up; perhaps my MasterChef ambitions are making a comeback?
