Honey Glazed Prawns

INGREDIENTS

  • 225g raw peeled prawns 

  • 15ml extra-virgin olive oil 

  • 30ml fish sauce 

  • 30g clear honey 

  • 2tsp roughly chopped fresh oregano 

  • black pepper to season

METHOD

  1. Combine the oil, fish sauce, and honey in a saucepan 

  2. Add the prawns and put on a low heat 

  3. Cook until the prawns turn pink (should take around 3 minutes) 

  4. Remove from the liquid and place in a serving bowl 

  5. Cook out the liquid in the pan until it has reduced a bit

  6. Pour the sauce over the prawns 

  7. Top with the fresh oregano and black pepper

I think the five stars are pretty self-explanatory...this was by far my favourite recipe I have made! It was so easy to make and even easier to eat.

I was a little scared at first because I thought the fish sauce was going to be overpowering but it actually worked so well and was balanced out nicely by the honey. Originally, when I saw the word 'glazed', I presumed it was going to be a thicker coating, but it was actually quite thin. However, this wasn't a problem because it created a sauce which I could then dip my bread in.

This tasted delicious and was so quick to throw together. For the first time in this recipe series, I had my mum taste my dish, and she loved it as well!

Day by day, my MasterChef career is looking increasingly more achievable!
